Watermelon and feta cheese salad? Sweet, juicy watermelon against salty, creamy feta is a winning combination. In Tanzania, we seem to get watermelons all year round. Although they are not really in season in October, you can still find a perfectly sweet watermelon around. Sometimes I don’t feel like having hot dinner so lately I found myself experimenting with protein-rich salads. I am not reinventing the wheel here…feta cheese and watermelon are a classic pairing; I just added a few extra ingredients. If you’re looking for a cool and refreshing salad recipe for the oncoming hot weather, look no further!
For this recipe, I am proud to use locally made feta cheese from Njombe Milk Factory. You can order from their office in Mikocheni near the Passionist Fathers Hostel off Mwai Kibaki Road or from The Deli Supermarket (Oysterbay Shopping centre).
Serves 2
You will need:
- ¼ medium watermelon (approx. 4 cups) , diced into bite-sized cubes
- ½ large cucumber (approx. 1 cup), diced into bite-sized cubes
- 100g feta cheese, diced into bite-sized cubes
- Juice from 1 lime
- 2 tbs extra virgin olive oil (using the best oil you can afford makes a huge difference)
- 2 tbs roughly chopped fresh mint leaves
- Salt and black pepper
What to do:
- In a small bowl, combine the lime juice, salt and black pepper. Whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste and adjust seasonings.
- In a large bowl, combine the melon and cucumber. Pour the dressing over the mixture and toss gently until everything is coated and evenly mixed.
- Place the feta cheese cubes on top and toss gently.
