Wine and Food Pairing with Southern Sun’s Denzil McAnda

The right wine can enhance a dish to perfection. Swahili Coast Foodie has invited Denzil McAnda from Southern Sun Hotel Dar Es Salaam to pair up some of his favourite dishes from the new menu at the hotel’s Baraza Restaurant with great wines readily available in the country.

Denzil’s expert knowledge on how to make wine choices that complement the flavour of a dish will be showcased in a blog series starting this week. Southern Sun’s senior restaurant manager began his professional training in his home city of Cape Town where he studied international hotel management. He has since worked for some of South Africa’s most outstanding 5-star hotels and restaurants. These include the Cape Royale Hotel and Twelve Apostles in Cape Town where he worked under celebrated sommelier Luvo Ntezo. In Pretoria he developed his knowledge further at Hemingways Restaurant & Cellar at Leriba Hotel and Faircity Group’s Roodevallei.

Denzil has developed an extensive knowledge of his homeland’s wines from visits to many of the nation’s most outstanding vineyards and wineries. He has also undertaken courses in international wine studies and has used his knowledge to help devise the hotel’s new wine list. Denzil and Chef Joe’s Food and Wine suggestions appear weekly at Baraza Restaurant and the upcoming blogs will give you some examples of how to pair up great wine with fine food.
